Grana Padano is a hard, cooked-curd cheese originating from the Po Valley in Northern Italy. Produced within a specific geographic area encompassing the provinces of Parma, Reggio Emilia, Modena, Mantua, Bologna, and Verona, it has been a staple of Italian gastronomy since the Middle Ages.
The cheese is crafted using traditional methods, primarily utilizing raw cow's milk. The essential ingredients are limited to milk, salt, and rennet. During production, the milk is heated and combined with rennet to coagulate the curds, which are then cooked and pressed into large, distinctive wheels.
A superior Grana Padano is distinguished by its characteristic granular, crumbly texture and a complex flavor profile that often features nutty and savory notes. To ensure authenticity and quality, the cheese is protected by the Denominazione di Origine Protetta (DOP) status. This designation regulates the production and aging process, which typically ranges from nine to twenty months or longer, depending on the desired intensity.
While frequently compared to Parmigiano-Reggiano, Grana Padano is generally noted for being milder and more versatile. It is widely utilized as a culinary ingredient in various dishes, including risotto, pasta, and polenta, or served shaved over salads. Regional variations in milk composition and aging duration allow for a wide spectrum of profiles, ranging from mild and creamy to sharp and intense.
