Pasta with Burrata, Fried Zucchini and Basil

Chef Max Mariola makes a delicious pasta dish with fresh burrata, crispy fried zucchini and zucchini flowers, fragrant basil, and Grana Padano cheese. This Roman-style recipe uses linguine from Campofilone and is perfect for a quick and satisfying meal.

Method

  1. Cut the zucchini into thin strips; also cut the zucchini flowers into strips.
  2. Heat abundant extra virgin olive oil in a pan.
  3. Pat dry the basil and add it to the oil.
  4. Fry the zucchini until they become green and crispy.
  5. Remove the zucchini and set aside, reserving the oil.
  6. Finely slice the spring onion, including the green part.
  7. In the same pan, gently sauté the spring onion in a little oil.
  8. Add the sliced zucchini flowers.
  9. Cook the linguine in salted boiling water.
  10. Add torn basil leaves to the sauce.
  11. Add plenty of grated Grana Padano cheese.
  12. Drain the pasta al dente, reserving some pasta water.
  13. Add the pasta to the pan with the sauce and a splash of cooking water.
  14. Toss with more Grana Padano and a drizzle of extra virgin olive oil.
  15. Season with black pepper to taste.
  16. Plate the pasta and add fresh burrata, mixing it into the pasta.
