Chef Max Mariola makes a delicious pasta dish with fresh burrata, crispy fried zucchini and zucchini flowers, fragrant basil, and Grana Padano cheese. This Roman-style recipe uses linguine from Campofilone and is perfect for a quick and satisfying meal.

Ingredients
8 items- 250 gLinguine di Campofilone
- Burrata FrescaUse small burratine for best texture
- ZucchiniIncluding the flowers
- Fresh Spring Onion
- Fresh BasilTo taste
- Grana PadanoGrated, to taste
- Extra Virgin Olive OilFor frying and finishing
- Black Pepper(optional) — To taste
Method
- Cut the zucchini into thin strips; also cut the zucchini flowers into strips.
- Heat abundant extra virgin olive oil in a pan.
- Pat dry the basil and add it to the oil.
- Fry the zucchini until they become green and crispy.
- Remove the zucchini and set aside, reserving the oil.
- Finely slice the spring onion, including the green part.
- In the same pan, gently sauté the spring onion in a little oil.
- Add the sliced zucchini flowers.
- Cook the linguine in salted boiling water.
- Add torn basil leaves to the sauce.
- Add plenty of grated Grana Padano cheese.
- Drain the pasta al dente, reserving some pasta water.
- Add the pasta to the pan with the sauce and a splash of cooking water.
- Toss with more Grana Padano and a drizzle of extra virgin olive oil.
- Season with black pepper to taste.
- Plate the pasta and add fresh burrata, mixing it into the pasta.
