Pasta Rostida

Pasta Rostida is a typical northern Italian dish made with pasta, potatoes, pancetta, and onion, finished with grana cheese. It is a simple and hearty one-pot dish.

- Pasta Fusilli Bucatior other short pasta
- Saltfor the boiling water
- Waterfor cooking
- Grana Padanograted, or Parmesan
- Black Pepper(optional) — optional
Method
- Slice the onion and add a swirl of oil to the pan. Turn on the heat and add the onion.
- Cut the pancetta into strips and add to the pan, keeping the heat at medium‑low.
- Peel and dice the potatoes.
- Bring a pot of water to a boil, add salt, then add the potatoes and the fusilli bucati pasta together.
- Scoop out some pasta cooking water and add it to the pan with the onion and pancetta. Keep the pan on very low heat.
- Drain the pasta and potatoes slightly early and transfer them to the pan, adding a little more cooking water.
- Cook everything together until the liquid is almost completely absorbed.
- Turn off the heat and add a generous grating of grana (or parmesan) cheese.
- Optionally, drizzle with a little extra olive oil and add some black pepper.
