Peposo is a rustic Tuscan beef stew, originating from the town of Empoli in the province of Florence. Its name derives from *pepe* (pepper), reflecting the dish’s defining characteristic: an intense, almost aggressive use of black pepper. The dish’s origin is tied to the kilns of Impruneta, where terracotta workers would slow-cook tough cuts of beef overnight in Chianti wine, using the residual heat of the ovens.
