The story
Tucked away along the Via Cassia per Siena in Bargino, Trattoria da Bule is the kind of rustic, walk-in-friendly spot that makes the Chianti region feel like a secret worth sharing. With a 4.7 rating and tags like "local-spot" and "family-friendly," it has earned a devoted following among those who prefer honest cooking over tourist traps. Creator Sentieri Golosi captured the sentiment perfectly, calling it a place to "mangiare senza farsi derubare"—to eat well without being robbed—praising the warm atmosphere and generous portions.
The kitchen leans into Tuscan tradition with a menu that includes Pici alla Carrettiera, a hearty Peposo, and Rosticciana, alongside a Tagliere di Spalla, Bufala e Carciofini starter. For dessert, a Cheesecake and a Crumble con Mele e Mirtilli round out the experience. No reservations are taken, so arriving early is part of the ritual at this no-frills trattoria where the value is as memorable as the food.

AI summary of what 7 dish mentions say about the food
At Trattoria da Bule, the slow-braised Peposo steals the show, a deeply savory, peppery stew that embodies rustic warmth. Reviewers describe the overall vibe as soulful and unpretentious, a true taste of Florentine home cooking.
“This is my brother's favorite dish. I take a little piece with some fat. It's a bit too fatty. Let's take a little piece of meat. Very collagenous, you can feel it on your lips immediately. The meat is very tender, really well done. It's not super peppery, let's say moderately peppered. There's a tiny bit of tomato which traditionally shouldn't be there, but it's very good. I'm a big fan of peposo, I always eat it and it's always good. I don't taste the tomato even if I see it. The meat is cooked very well, the fat is very pleasant, and the portion is generous, big and good, so it makes you happy.”

Dishes mentioned
Tagliere di Spalla, Bufala e Carciofini
The spalla is very flavorful, but you need to eat it with bread because it's a bit salty. The bufala is already cut and very good, but I think it's better combined with the spalla for a great mix. The carciofini are crunchy and leave a slightly acidic taste from the vinegar. I don't remember the bufala being this tasty.
Carboncino al Forno con Carciofi Saltati
This cheese is amazing! It's a mix of cow and goat cheese, baked and then covered with sautéed artichokes. It's lava hot, but so good. It's tasty, flavorful, deep, and beautifully melted because it's all molten. The cow's milk gives it a fattier part, the goat's milk gives it a stronger flavor. This is paradise for me. Cheese paradise. This dish is out of this mind.
Pici alla Carrettiera
The pici look fabulous, you can even see it. The cooking is al dente, really well done. The sauce is fresh, you can taste the good tomato. The cheese is a bit less noticeable, but the rest is very flavorful, so I like it a lot. It's not spicy. This is the true first course for the celebration. The pici are nice and thick, very much like homemade. Nice and red, nicely garlicky as it should be, because carrettiera must be very garlicky. It's the classic comfort food first course that takes you back to the 80s and 90s.
Peposo
This is my brother's favorite dish. The meat is cooked very well, the fat is very pleasant, and the portion is generous, big and good, so it makes you happy.
Rosticciana
Nice portion, generous. This is a celebratory rosticciana, very good, very juicy, but I need that charcoal push, more smokiness. The rest is good. The beauty of rosticciana is that you pick it up with your hands. You can feel the embrace. Nice and meaty, glorious. I don't know if I can eat it all. These are not like American ribs that fall off the bone. You have to bite a bit. Rosticciana beats ribs 4-0, sorry. And you have to accompany it with roast potatoes, which are always good. The potatoes are well cooked, very good.
