Peposo is a traditional Tuscan beef stew, historically cooked by furnace workers. The original recipe uses beef, garlic, rosemary, and lots of pepper and wine. Chef Federico Fusca's version adds tomato for extra flavor. Slow-cooked for 2-3 hours.

- In a pot, heat oil with garlic and rosemary.
- Add the beef and brown it on all sides.
- Season generously with salt and pepper.
- Pour in about 1 liter of wine to cover the meat.
- For the chef's version, add a small amount of tomato.
- Simmer gently for 2-3 hours until the meat is tender.
- Serve with bread for scarpetta (sopping up the sauce).
