A comforting soup made with toasted stale bread, rich bone broth, and all the delicious bits that come from slow-cooked bones: marrow, cartilage, and tender meat. Finished with a drizzle of olive oil and coarse salt.

9 items- Stale Breadthick slices
- Olive Oilfor toasting the bread and drizzling
- Ossa di Manzobones with marrow and meat attached
- Carrotfor the broth
- Onionfor the broth
- Celeryfor the broth
- Nervetti(optional) — beef cartilage, optional but traditional
- Midollobone marrow
- Coarse Saltcoarse salt, to taste
Method
- Cut stale bread into thick slices.
- Heat a drizzle of olive oil in a pan and toast the bread slices on both sides until golden and crispy.
- Meanwhile, if not already prepared, make a bone broth by simmering beef bones, carrot, onion, and celery in water for several hours.
- Place the toasted bread slices at the bottom of a serving bowl.
- Ladle the hot bone broth over the bread, making sure to include pieces of marrow, cartilage (nervetti), and any small meaty bits from the broth.
- Add a few marrow pieces directly on top if desired.
- Season with coarse salt to taste.
- Drizzle with a little more olive oil if you wish, then serve immediately.
