A comforting and flavorful Turkish-style tripe soup with a tangy yogurt base and spicy butter sauce. Simple to make yet incredibly tasty.

Ingredients
11 items- Trippa precottarinsed and cut into small pieces
- Waterfor cooking the tripe
- Saltto taste
- Plain Yogurtfor the base mixture
- 4 tspApple Cider Vinegardivided: 1 tsp for base, 3 tsp for sour sauce
- 1 pcsEggfor the base mixture
- 1 pcsLemondivided: juice of half for base, juice of half for sour sauce
- Garlic2 cloves for base, additional to taste for sour sauce
- 2 tbspFloursifted, for the base mixture
- Butterfor the chili butter sauce
- 1.5 tspChili Powderor to taste
Method
- Rinse the pre-cooked tripe and cut it into small pieces.
- Bring a pot of salted water to a boil, add the tripe and cook for 5 minutes.
- In a bowl, mix together yogurt, apple cider vinegar (1 tsp), egg, juice of half a lemon, pressed garlic (2 cloves), and sifted flour. Mix well.
- Take a glass of the tripe cooking water and add it to the yogurt mixture to temper it.
- Pour the mixture into the pot with the tripe, stir, and cook over medium-low heat for 35-40 minutes.
- Prepare the butter sauce: in a small saucepan, melt the butter, add chili powder, and stir. Turn off the heat.
- Prepare the sour sauce: squeeze the remaining half lemon, add pressed garlic (to taste) and 3 teaspoons of apple cider vinegar, mix.
- Serve the soup, adding some chili butter and some sour sauce to each serving.
