Crispy on the outside and incredibly soft inside, these fish croquettes are made with steamed cod, boiled potato, egg, parsley, lemon zest, and breadcrumbs, then breaded and fried to golden perfection. An easy and delicious recipe.

- Steam the cod fillets for 6-7 minutes until cooked through.
- Mash the cooked cod with a fork in a large bowl.
- Add the boiled potato and mix.
- Beat one egg and add it to the mixture.
- Add chopped parsley, salt, pepper, and lemon zest. Mix well.
- Gradually add breadcrumbs until the mixture holds together but remains moist.
- Shape the mixture into croquettes, about 40g each.
- Coat each croquette first in flour, then in beaten eggs, and finally in breadcrumbs.
- Heat oil to just below 180°C (medium-high heat).
- Fry the croquettes in batches until golden brown and crispy.
- Drain on paper towels and sprinkle with a little salt if desired.
