Ingredients
10 items- 500 gBroccoli RabeFresh turnip tops, cleaned and cut
- 300 gSweet PotatoSweet potato, peeled and cut into small cubes
- 2 pcsGarlicCloves of garlic, grated
- 1 pcsSpring OnionSpring onion, sliced
- Pecorino di FossaAged pecorino cheese, grated for serving; can substitute with other aged pecorino
- Fresh Chili PepperFresh chili pepper, grated or chopped, to taste
- Extra Virgin Olive OilExtra virgin olive oil, for cooking and finishing
- Coarse SaltCoarse salt, to taste
- WaterWater, as needed for cooking
- Bread(optional) — Slice of bread, optional for serving
Method
- Clean the turnip tops: remove the tough ribs by defibering them, and cut the leaves and florets into pieces. Keep all edible parts.
- In a large pot, heat plenty of olive oil. Grate in the garlic and let it melt slowly.
- Add the spring onion, remove the first layer, and sauté gently.
- Add the sweet potato cut into small cubes. Stir and cook for a few minutes until it starts to soften.
- Add water to cover, then add the turnip top florets and leaves. Cook for about 10 minutes until everything is tender.
- Season with coarse salt. Add fresh chili, grated or chopped, to taste.
- Serve the soup in bowls. Grate pecorino di Fossa (or another aged pecorino) on top. Optionally, add a slice of bread.
- Finish with a drizzle of extra virgin olive oil and enjoy hot.
