Ingredients
6 items- Romanesco ArtichokesRomanesco artichokes preferred, but any large artichoke can be used
- Extra Virgin Olive OilGood quality Ligurian or other extra virgin olive oil
- MentucciaRoman mint (mentuccia); if unavailable, substitute with regular mint or parsley
- Garlic3-4 cloves, to taste
- SaltTo taste
- PepperTo taste, freshly ground preferred
Method
- Clean the artichokes: remove the outer leaves, cut off the stem and top, and rub with lemon water to prevent oxidation.
- Prepare the stuffing: mix together finely chopped mentuccia (Roman mint), garlic, salt, and pepper.
- Gently open the artichoke leaves and place the stuffing inside each artichoke.
- Pour a little olive oil into a pot. Add a few extra sprigs of mentuccia and garlic cloves to the pot.
- Place the artichokes upside down in the pot, pressing them so they stay in place.
- When the pot is hot and sizzling, add hot water until it reaches just below the stem of the artichokes.
- Cover the artichokes with a sheet of wet parchment paper, then put on the lid.
- Cook over medium heat (reduce to about half power) for 20 minutes, or until the artichokes are tender.
- Serve whole.
