Cabbage and Pork Soup

A robust and rustic cabbage and pork soup, full of smoked flavor and surprisingly easy to make.

Ingredients

- OilA drizzle
- Maiale AffumicatoIf not available, substitute with smoked pancetta or bacon
- 1 pcsOnionHalf studded with cloves, half finely chopped
- 1 pcsCarrot
- Paprica Dolce o PiccanteSweet or spicy, according to preference
- Savoy Cabbage
- Green Cabbage
- Chicken Broth
- Salame Affumicato
- SaltTo taste
- ClovesTo stud the onion half
Method
- Place a casserole over medium heat and add a little butter and a drizzle of oil.
- Cut the smoked pork into medium pieces and add to the pan. Cook until sizzling.
- Meanwhile, prepare the onion: cut half and stud with cloves; chop the other half coarsely. Peel and chop the carrot.
- Add the chopped onion and carrot to the pan. Sauté briefly.
- Add the paprika (sweet or spicy) and stir.
- Cut the savoy cabbage and white cabbage into strips. Add them to the pan (first the savoy, then the white). Let them wilt slightly.
- Add a little chicken broth to help soften the cabbages.
- Add the smoked salami.
- Pour in the rest of the chicken broth. Season with salt.
- Add the onion half studded with cloves on top of the soup.
- Cover, reduce heat to medium-low, and simmer for about one hour.
- Serve hot.
