Ingredients

- 1 pcsPotato
- 200 gZucca Mantovana
- 100 gBorlotti Beansfresh
- 2 pcsCarrots
- 1 pcsLeek
- 1 pcsGarlicwhole clove
- 1 ramettoRosemaryfresh sprig
- 100 gPasta Spezzatabroken pasta of any shape
- Extra Virgin Olive Oilfor cooking and drizzling
- Saltto taste
- Parmigiano Reggiano(optional) — grated, for serving
- Chili Oil(optional) — chili oil, for serving
Method
- Wash the borage (or black kale) and remove the tough stems, keeping only the leaves.
- Peel and dice the potato. Remove the skin from the Mantuan pumpkin and cut into cubes. Peel and slice the carrots and leek.
- In a large pot, heat a drizzle of olive oil. Add the whole garlic clove and a sprig of rosemary. Add the potato and pumpkin and sauté briefly.
- Add the fresh borlotti beans, carrots, leek, and enough water to cover. Season with salt and simmer gently for about 30 minutes, until the beans and vegetables are tender.
- Add the borage leaves and bring back to a simmer. Then add the broken pasta and cook for 7 minutes (or according to pasta package instructions).
- Remove the garlic and rosemary sprig. Serve the soup hot, drizzled with extra virgin olive oil, a pinch of chili oil, and grated Parmesan cheese. Garnish with fresh rosemary if desired.
