A hearty Roman soup made with borage (or black kale), pumpkin, borlotti beans, and pasta. Chef Max Mariola's comforting recipe to lift your spirits on gloomy days.

Method

  1. Wash the borage (or black kale) and remove the tough stems, keeping only the leaves.
  2. Peel and dice the potato. Remove the skin from the Mantuan pumpkin and cut into cubes. Peel and slice the carrots and leek.
  3. In a large pot, heat a drizzle of olive oil. Add the whole garlic clove and a sprig of rosemary. Add the potato and pumpkin and sauté briefly.
  4. Add the fresh borlotti beans, carrots, leek, and enough water to cover. Season with salt and simmer gently for about 30 minutes, until the beans and vegetables are tender.
  5. Add the borage leaves and bring back to a simmer. Then add the broken pasta and cook for 7 minutes (or according to pasta package instructions).
  6. Remove the garlic and rosemary sprig. Serve the soup hot, drizzled with extra virgin olive oil, a pinch of chili oil, and grated Parmesan cheese. Garnish with fresh rosemary if desired.
