Method

  1. Remove the tips from the zucchini and slice them evenly, using a mandoline or a knife, to a uniform thickness.
  2. Spread the zucchini slices on a clean cloth or parchment paper, slightly separated to avoid overlapping. Cover with another cloth and let them dry in the sun or in a dry place for 3–4 hours (at least 2–3 hours) until they are as dry as possible.
  3. Heat a large pan with a generous amount of olive oil. Add two whole garlic cloves and heat until the oil is hot.
  4. Add the dried zucchini slices and fry over high heat for about ten minutes, without salting initially to prevent them from releasing water and becoming boiled.
  5. Once the zucchini are golden, crispy, and slightly charred in places, season with salt.
  6. Add a splash of vinegar and let it evaporate completely.
  7. Meanwhile, chop some fresh mint leaves.
  8. Turn off the heat, add the chopped mint, and toss gently.
  9. Serve hot, warm, or at room temperature.
