Ziti alla Genovese

A classic Neapolitan pasta dish made with an abundance of onions slowly cooked with a piece of beef, then served with ziti pasta.
Ingredients
7 items- Cipolle Mistea large quantity, about half a kilo or more
- Buttera knob
- Beefa thick piece, traditionally 'sbordone' or 'romano' cut
- Dry White Winea splash
- Coarse Saltto taste
- Black Pepperto taste
- Zitidried pasta, about 100g per person
Method
- In a large pot, melt a knob of butter with black pepper over low heat.
- Add the beef piece and brown it on all sides without burning the butter.
- Cover the meat entirely with the mixed onions.
- Season with coarse salt and black pepper, and add a splash of dry white wine around the edges.
- Close the pot, lower the heat, and cook slowly for a long time until the meat is tender and the onions are reduced.
- Remove the meat, trim away excess fat and the central nerve, then shred the meat.
- Return the shredded meat to the onion sauce.
- Meanwhile, cook the ziti in boiling salted water until al dente.
- Reserve some pasta water, then drain the pasta and add it to the sauce.
- Toss with a little pasta water to combine, then serve.
