Baked St. Joseph's Zeppole

A recipe for baked zeppole for St. Joseph's Day, made with choux pastry dough and filled with pastry cream and amarena cherries.

Ingredients

- 200 gButter
- 100 gFlour
- 10 gFine Salt
- 10 pcsUova medie
- Powdered SugarFor dusting
- Pastry CreamFor filling
- Amarena sciroppataFor garnish
Method
- Put water and salt in a pot and heat.
- When water is hot, add butter and melt it.
- When butter is melted and water boils, remove from heat, add flour all at once and mix vigorously. Then return to heat and cook until a white film forms.
- Transfer dough to a cold bowl and let it cool for a couple of minutes.
- Add eggs one at a time, mixing thoroughly after each addition.
- Fill a piping bag with a star nozzle.
- Pipe zeppole in a single ring shape.
- Preheat oven to 180°C static.
- Place zeppole on a baking sheet and bake on the lower rack without opening the oven door.
- Bake for about 25 minutes, then check; continue baking until golden and dry, about 35-40 minutes total.
- Remove from oven.
- Dust with powdered sugar, fill with cream, and top with amarena cherries.
