Classic Roman street food from the 1980s: boiled pig trotters served with a fragrant dressing of parsley, Roman mint, garlic, and chili, then marinated for an hour.

Method

  1. Using a blowtorch or gas flame, burn off any hair from the trotters.
  2. Place bay leaves in cold water and add the trotters.
  3. Squeeze lemon into the pot and bring to a boil.
  4. Cook for at least 3 hours until the trotters are tender.
  5. Prepare the dressing: chop parsley, Roman mint, chili, and garlic.
  6. Add lemon juice, olive oil, salt, and pepper. Mix well.
  7. Once cooked, let the trotters cool down.
  8. Put the cooled trotters in a bowl.
  9. Add the dressing and massage with your hands to season.
  10. Cover with plastic wrap and refrigerate for about 1 hour.
  11. Serve.
