Zabaglione

Zabaglione is a traditional Italian dessert made with egg yolks, sugar, and sweet wine, often flavored with brandy. In this episode, Giorgione demonstrates his adult version using Sagrantino passito and brandy, served with caramelized sugar on top.
Ingredients
4 items- Egg YolksRemove all traces of egg white and chalaza
- SugarTo taste; about 1 tablespoon per yolk as a guideline
- Sagrantino PassitoOr other sweet passito wine
- BrandyCognac can be used instead
Method
- Separate the egg yolks, removing all traces of egg white and the chalaza (the white cords).
- Add a small amount of sugar to the yolks and begin beating with a whisk until the mixture becomes light, fluffy, and almost white.
- Gradually add a little Sagrantino passito (or other sweet passito wine), mixing gently with a fork to avoid deflating the mixture.
- Add a small amount of brandy (or cognac, if available) and mix gently with a fork until well incorporated.
- Optionally, sprinkle a layer of sugar on top of the zabaglione and caramelize it with a kitchen torch for a crunchy finish.
- Serve immediately.
