A rustic, flavorful, and simple dish that always comes out perfectly. Vermicelli alla Montanara is this and much more. This recipe will come in handy when you have no bright ideas for lunch or dinner. It is a quick and easy first course that requires little effort.

Method

  1. Finely chop one onion.
  2. Add a little oil to a pan.
  3. Add the chopped onion to the pan.
  4. Remove the casing from the sausage and crumble it into the pan with your hands.
  5. Brown the sausage well over high heat.
  6. Halve or leave whole some cherry tomatoes.
  7. Once the sausage is well browned, deglaze with white wine and let the alcohol evaporate.
  8. Add the cherry tomatoes and a pinch of salt.
  9. Cook the vermicelli pasta in boiling salted water.
  10. While the pasta cooks, chop some fresh fennel tops and add them to the sauce.
  11. Add a grind of black pepper.
  12. Drain the pasta al dente and transfer it to the pan with the sauce, adding a little pasta cooking water.
  13. Mix well and add a handful of grated pecorino cheese.
  14. Serve immediately with extra pecorino and pepper if desired.
