A quick and spicy Italian egg dish made with nduja and smoked provola cheese, cooked in a pan until the cheese melts and becomes stringy.

Ingredients
5 items- 'NdujaA spicy spreadable pork sausage from Calabria.
- Olive OilA drizzle.
- Eggs2 eggs suggested for a single serving.
- SaltA pinch, to taste.
- Smoked Provola2 slices (about 30-40 g).
Method
- Place the nduja in a pan with a drizzle of olive oil and let it melt slowly.
- Add the eggs to the pan directly over the melting nduja.
- Add a pinch of salt to the yolks (lightly, as the nduja is already salty).
- Meanwhile, cut the smoked provola into slices.
- Place the provola slices on top of the eggs.
- Baste the eggs with the melted fat from the pan to help melt the cheese and keep it stringy.
- Serve immediately.
