Turli is an Albanian dish consisting of a delicious meat and vegetable stew, rich and rustic, perfect for summer with ingredients like peppers, zucchini, and eggplant.

- ZucchiniCut into pieces similar to carrots
- Bell PeppersCut into strips or chunks
- EggplantsCut into chunks, fried last
- ParsleyChopped, for garnish
- Gombo (Ocra)(optional) — Traditional ingredient, but hard to find (optional). Not used in this demonstration.
Method
- Cut the meat into small pieces and boil it in salted water until tender (about 1.5 hours). Reserve the broth.
- In a large ovenproof pan, heat oil and sauté sliced onion with a whole chili pepper (optional) until softened.
- Add blended peeled tomatoes, a pinch of pepper, and a little of the meat broth. Let it simmer.
- Fry the vegetables separately in oil: first the carrots (cut thicker), then zucchini, then bell peppers, and finally eggplant (cut while peppers are frying). Season the fried vegetables with salt and pepper.
- Once the meat is ready, add it to the tomato-onion sauce.
- Chop parsley and sprinkle it over the vegetables.
- Transfer the fried vegetables to the pan with the meat and sauce. Add a little more broth.
- Bake in a preheated static oven at 200°C for a few minutes until everything is heated through and combined.
- Serve with crusty bread.
