Trippa with Artichokes

Forget the usual tomato tripe. This version with artichokes and mint is pure poetry.

Ingredients
12 items- 800 gTrippa Scura
- 4 pcsCarciofi
- 1 pcsOnion
- 1 pcsCarrot
- 1 pcsCelery
- 2 pcsGarlic
- Fresh MintA few leaves
- SaltTo taste
- PepperTo taste
- 100 gGrated Pecorino80-100 g, adjust to taste
- Extra Virgin Olive OilAs needed
- MalvasiaFor deglazing
Method
- Choose dark, untreated tripe and cut it into strips lengthwise.
- Prepare a mixture of chopped celery, carrot, and onion.
- In a pan with oil, sauté the mixture for a few minutes.
- Add the tripe and brown it.
- Meanwhile, clean the artichokes and slice them not too thin.
- Season the tripe with salt, pepper, and mint leaves (including stems).
- Deglaze with malvasia wine and let the alcohol evaporate.
- In another pan, heat oil and garlic, then add the artichokes, season with salt and pepper. Remove the garlic and cook until crispy.
- Combine the artichokes with the tripe and cook over moderate heat for about 30-40 minutes.
- Serve with grated pecorino cheese (optional).
