A traditional Italian dish of squid and potatoes cooked with cherry tomatoes, white wine, garlic, and parsley, perfect as a second course or appetizer with crostini.

10 items- Extra Virgin Olive Oila little
- Garlic1-2 cloves
- Squidas needed
- White Winehalf a glass
- Cherry Tomatoesabout 200g (a handful)
- Potatoes2 medium potatoes, diced
- Waterone glass, plus more as needed
- Saltto taste
- Pepperto taste
- Parsleychopped, to taste
Method
- Heat extra virgin olive oil in a pan and brown the garlic, then remove it.
- Clean and slice the squid into rings, then brown them in the same pan.
- Deglaze with half a glass of white wine and let it evaporate.
- Add halved cherry tomatoes, cover, and cook on moderate heat for about ten minutes.
- Add diced potatoes and a glass of water, then continue cooking on medium-low heat.
- Season with salt and pepper, cover, and let cook. Check occasionally and add more water if needed.
- When the potatoes are cooked but still firm, add chopped parsley and let the sauce reduce.
- Serve in a terracotta bowl or any plate. The sauce should not be too runny but still present.
