Ingredients

Method
- In a large bowl, add eggs, sugar, and a pinch of salt. Using an electric mixer, whip until light and fluffy.
- Melt the butter and chocolate together in a bain-marie or microwave, then let cool slightly.
- Add the melted chocolate-butter mixture to the whipped eggs and mix until combined.
- Add vanilla extract (or vanilla seeds) and mix until the batter is homogeneous.
- Gradually sift in the flour, mixing after each addition until fully incorporated.
- Butter the molds (disposable or steel). Fill each mold about three-quarters full (leave about half a centimeter from the rim).
- Bake in a preheated oven until the edges are set and the center is still slightly soft when gently shaken, about 15 minutes (oven time may vary; start checking after 12–13 minutes).
- Carefully unmold and serve immediately. Decorate as desired.
