Yogurt and Orange Cake

A super-easy cake that is one of my son Paolo's favourites. It combines yogurt and orange for a fragrant and simple homemade flavour.

Ingredients
8 items- 5 pcsEggSeparated into whites and yolks
- 250 gFlourAll-purpose flour, sifted
- 1 pcsOrangeBlended into puree
- 125 gPlain YogurtPlain, full-fat, unsweetened
- 170 gSugar
- 190 gButterSoftened
- 8 gBaking PowderHalf a sachet, sifted with flour
- Powdered Sugar(optional) — For dusting after baking (optional)
Method
- Take an orange. If not organic, scrape the outer peel lightly, then rinse well. Cut into wedges and blend with a mini-pimmer until smooth.
- Separate the eggs. Whip the 5 egg whites until stiff peaks form.
- In a bowl, whisk the 5 egg yolks with 170g sugar until the colour lightens.
- Add 190g butter (softened) and mix gently.
- Add 125g plain yogurt (full-fat, unsweetened) and mix.
- Add the blended orange pulp and mix until combined.
- Sift together 250g flour and 8g baking powder (half a sachet). Add to the mixture and fold gently.
- Fold the whipped egg whites into the batter using a bottom-to-top motion until just combined.
- Butter and flour a high-edged cake mould. Pour in the batter and spread evenly.
- Bake in a preheated oven at 180°C for about 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool, then optionally dust with icing sugar before serving.
