A classic cherry pie with a sandy, tender crust and a rich, creamy cherry filling flavored with vanilla and a hint of lemon, topped with cinnamon sugar and baked until golden.

- Salta pinch
- Cold Wateras needed to form dough
- Cherriesfresh, pitted
- Corn Starchcornstarch
- Vaniglia Frescaseeds scraped from pod
- Lemon Juice(optional) — a splash
- Zucchero alla Cannellacinnamon sugar for topping
Method
- Mix flour, salt, and cold butter (or margarine) together until the mixture resembles fine sand.
- Add cold water and form a dough; do not overwork.
- Pit the cherries and place them in a bowl.
- To the cherries, add cornstarch, sugar, and a small amount of blended cherries (for creaminess). Add fresh vanilla and a splash of lemon juice. Mix well.
- Roll out the dough on a floured surface into a circle.
- Line a pie dish with the rolled dough, then roll out the remaining dough and cut into strips for the lattice top.
- Pour the cherry filling into the crust, arrange the strips over the top, and sprinkle generously with cinnamon sugar.
- Bake at 200°C (400°F) for about one hour, until the crust is golden and the filling bubbles.
