Crostino with Anchovies

A quick and delicious crostino topped with anchovy sauce, mozzarella, and toasted bread, perfect as a starter or a quick meal.

Method

  1. In a pan, melt a small piece of butter and add a clove of fresh garlic.
  2. Add a few anchovies in oil and let them melt slowly over low heat without frying.
  3. Pour in fresh cream and let it reduce over high heat until you get a creamy sauce.
  4. Remove the garlic and set the sauce aside.
  5. Cut a 3-4 cm thick slice of rustic bread and remove the crust if desired.
  6. In a separate pan, melt butter with a drizzle of olive oil and aromatic herbs (sage, rosemary) to flavor the butter.
  7. Brush the bread on all sides with the aromatic butter.
  8. Toast the bread in a preheated oven at 180°C for about 10 minutes, turning halfway, until golden and fragrant.
  9. While the bread toasts, cut fior di latte mozzarella into small pieces and drain well.
  10. When the bread is toasted, top with the mozzarella pieces and return to the oven until the mozzarella melts.
  11. Remove from the oven and drizzle generously with the anchovy sauce.
  12. Finish with fresh lemon zest and a pinch of black pepper.
  13. Serve immediately.
