Method

  1. Finely chop the onion.
  2. In a pan, toast the garam masala and cumin for a few seconds until fragrant.
  3. Add oil and the chopped onion to the pan and sauté until translucent.
  4. Add the ground beef and cook, breaking it up with a whisk, until browned and no longer clumpy.
  5. Season with salt and pepper.
  6. Add ketchup and tamarind sauce (about 3-4 tablespoons of tamarind) and stir well. Cook until the mixture is dry and creamy.
  7. Add sugar and pine nuts, mix well, then remove from heat and let cool slightly.
  8. Preheat the oven to 200°C (ventilated).
  9. Roll out the puff pastry on a flat surface. Place the meat filling in the center, leaving the edges free.
  10. Fold the pastry edges over the filling and press to seal, forming a round pie. Prick the top to release steam.
  11. Beat an egg with a drop of oil and brush over the pastry.
  12. Sprinkle white sesame seeds on top.
  13. Bake for 30 minutes at 200°C until golden brown and crispy.
  14. Let it cool slightly before slicing and serving.
