A traditional Italian cake from the 13th century, without flour or yeast, made with almond flour and ricotta. Simple and delicious.

- Almond FlourUse fresh, good-quality almond flour
- Ricotta
- Sugar (for the sauce)To taste
- Mixed BerriesA mix of raspberries, blueberries, and red currants
- WineA splash of wine (e.g., red or white)
Method
- Crack 6 eggs into a bowl and begin beating them.
- Add 500 g of sugar and continue beating until the mixture is light and airy.
- Grate the zest of an unwaxed lemon into the mixture.
- Incorporate the almond flour, stirring gently.
- Add the ricotta and mix gently until just combined.
- Pour the batter into a baking pan.
- Bake at 180°C for about 40 minutes until golden and set.
- While the cake bakes, prepare the berry compote: in a saucepan, combine sugar with a mixture of raspberries, blueberries, and red currants.
- Crush the berries slightly, then add a splash of wine and cook over medium heat until syrupy.
- Once the cake is baked and cool, serve with the warm berry compote spooned over.
