A simple Roman-style recipe for curly endive, blanched then pan-fried until crispy. Served with a drizzle of extra virgin olive oil, it makes a perfect side dish for meat or a light main course. Traditionally enriched with pecorino fondue and anchovy paste.

Ingredients
5 items- Indivia Riccia
- Coarse Saltfor blanching
- Extra Virgin Olive Oilgenerous amount
- Salta pinch
- Pepperto taste
Method
- Remove the stem of the curly endive, cut it into four parts and open it.
- Wash thoroughly to remove any dirt.
- Bring water to a boil, add a handful of coarse salt, then add the endive and cook for 5-6 minutes from when it starts boiling.
- Drain, let cool, then squeeze out the excess water.
- Heat a generous amount of extra virgin olive oil in a non-stick pan over high heat.
- Add one endive bundle at a time, spreading it out flat. Do not overcrowd the pan; cook in batches.
- Cook until the underside is golden and crispy, then turn.
- Season with a pinch of salt and pepper.
- Serve immediately with a drizzle of raw extra virgin olive oil.
