A simple yet delicious baked rice timballo with tomato sauce, mozzarella, and Parmesan, perfect for surprising your guests.

Ingredients
10 items- RiceCarnaroli or other risotto rice
- Blended Peeled TomatoBlended peeled tomatoes or passata
- GarlicA couple of cloves, to be removed later
- BasilFresh basil, generous amount
- SaltTo taste
- OilExtra virgin olive oil
- MozzarellaFor filling
- Parmigiano ReggianoGrated, for layers and topping
- BreadcrumbsFor coating the mold and topping
- ButterFor greasing mold and topping
Method
- Cook the rice in salted boiling water like pasta, until al dente.
- Meanwhile, prepare the tomato sauce: in a pan, heat oil with a couple of garlic cloves, then add blended peeled tomatoes, basil, and salt. Cook until the rice is almost ready.
- Drain the rice al dente.
- Remove the garlic cloves from the tomato sauce.
- Combine the rice with the tomato sauce directly in the pot, mixing well to coat every grain.
- Butter a ring mold and sprinkle with breadcrumbs.
- Layer half of the rice mixture in the mold, then add cubed mozzarella and grated Parmesan. Cover with the remaining rice.
- Top with more Parmesan, breadcrumbs, and a few dots of butter.
- Bake at 180°C (350°F) for 25-30 minutes.
- Remove from the oven and let rest for at least 20 minutes before unmolding.
- Carefully unmold and serve.
