A fresh and flavorful tuna tartare with Mediterranean ingredients like cherry tomatoes, capers, olives, and a delicate anchovy-garlic dressing.

Method
- In a small pan, heat a little oil. Add anchovy fillets, one garlic clove (not chopped), a pinch of thyme, and a little lemon zest. Cook gently until the anchovies melt. Remove from heat and let cool.
- Cut cherry tomatoes into small pieces. Place in a bowl. Add capers and olives (halve or quarter if large). Season with a little oil, salt, and thyme. Mix.
- Cut the fresh tuna into small cubes (or slightly finer, as you prefer). Season with a pinch of salt and a little lemon zest. Set aside.
- Once the sauce has cooled, add a squeeze of lemon juice. Strain through a fine sieve.
- To assemble, use a ring mold. Place some of the tomato salad on the bottom, then top with the seasoned tuna. Garnish with caper flowers.
- Spoon the strained sauce around the plate. Drizzle with a little extra olive oil and sprinkle with black pepper. Serve immediately.
