Tomato Tartare

A fresh tartare of ripe and green tomatoes, with gherkins, shallot, parsley, sun-dried tomatoes, and a creamy sun-dried tomato mayonnaise, seasoned with tabasco and pepper.

Ingredients

- Salt
- Cetriolini
- Shallot
- Parsley
- 4 pcsDried Tomatoes2 finely diced, 2 blended for mayonnaise
- Tabasco
- Black Pepper
Method
- Score an X on the tomatoes and blanch in salted boiling water for 10 seconds.
- Peel the tomatoes (they should come off easily).
- Remove the seeds and dice the tomatoes very small.
- Salt the tomato cubes and let them drain for 5 minutes.
- Dice the gherkins and shallot.
- Finely chop the parsley.
- Finely dice two sun-dried tomatoes and add them to the mixture.
- Blend the other two sun-dried tomatoes to form a mayonnaise-like consistency.
- Add two tablespoons of the sun-dried tomato mayonnaise, a pinch of tabasco, and black pepper. Mix well.
- Serve the tartare with bread.
