A fresh tartare of ripe and green tomatoes, with gherkins, shallot, parsley, sun-dried tomatoes, and a creamy sun-dried tomato mayonnaise, seasoned with tabasco and pepper.

Method

  1. Score an X on the tomatoes and blanch in salted boiling water for 10 seconds.
  2. Peel the tomatoes (they should come off easily).
  3. Remove the seeds and dice the tomatoes very small.
  4. Salt the tomato cubes and let them drain for 5 minutes.
  5. Dice the gherkins and shallot.
  6. Finely chop the parsley.
  7. Finely dice two sun-dried tomatoes and add them to the mixture.
  8. Blend the other two sun-dried tomatoes to form a mayonnaise-like consistency.
  9. Add two tablespoons of the sun-dried tomato mayonnaise, a pinch of tabasco, and black pepper. Mix well.
  10. Serve the tartare with bread.
