Beef Tartare Burger with Egg

A unique burger that combines the texture of a beef tartare with a raw egg yolk, served with crunchy green beans, avocado cream, seared cherry tomatoes, and a touch of scamorza cheese inside the patty.

Method
- Clean the green beans by snapping off the stem ends. Boil them in salted water without a lid until tender but still crunchy. Drain and optionally toss with butter.
- Cut the beef rump into small dice, removing any connective tissue. Season with salt and black pepper. Mix well.
- Form the beef into a patty. Place a piece of smoked scamorza cheese in the center and enclose it, shaping the patty again. Set aside.
- Halve the avocado, remove the pit, and scoop the flesh into a bowl. Add a squeeze of lime juice and a pinch of salt. Mash with a fork to a creamy consistency (not fully smooth like guacamole).
- Halve the datterini tomatoes. Heat a little oil in a pan and sear the tomatoes cut-side down until lightly charred. Remove.
- Slice the green part of a spring onion into thin rounds.
- To plate: arrange the green beans on a plate. Spoon the avocado cream alongside or on top. Place the beef patty next to it. Add the seared tomatoes and sprinkle with spring onion. Top the patty with a raw egg yolk. Garnish with fresh basil leaves and a drizzle of olive oil.
- Serve immediately and break the yolk before eating to enjoy the creamy texture.
