A Roman-style ragù made with tender young lamb (abbacchio) and pumpkin, served with tagliatelle pasta.

Ingredients

- Olive Oilextra virgin
- 1 pcsBay Leavesbay leaf
- White Winefor deglazing
- 1 pcsCarrot
- 1 pcsCipollotto Rosso Fresco
- 2 pcsGarliccloves
- Fresh Chili Pepper
- Saltto taste
- 100 gPumpkin
- 250 gTagliatelle di Campofiloneor other egg tagliatelle
- Pecorino Romanofor grating, to taste
Method
- Cut the lamb leg meat into small cubes, keeping the bone aside.
- Peel and finely dice the carrot, spring onion, and garlic. Halve the fresh chili.
- In a large pan, heat a drizzle of oil and brown the lamb bone and meat, adding a bay leaf.
- Deglaze with white wine.
- Add the chopped vegetables (carrot, spring onion, garlic, chili), season with salt, and sauté lightly.
- Add the pumpkin cut into small cubes and stir.
- Cover with hot water (or broth) and cook on low heat for at least 45 minutes, adding more water if needed.
- Meanwhile, bring a pot of salted water to a boil and cook the tagliatelle until al dente.
- Drain the pasta, reserving some cooking water.
- Transfer the pasta to the pan with the ragù, add a ladle of pasta water, and toss until well combined.
- Turn off the heat and grate pecorino cheese over the pasta.
- Serve immediately.
