Ingredients

Method
- Tie the turkey with kitchen twine so it holds its shape during cooking.
- Place the turkey in a baking dish with a drizzle of olive oil. Season with coarse salt and pepper.
- Add wild fennel, juniper berries, a strip of lemon zest, a few rosemary sprigs, and sage leaves.
- Cover the turkey with slices of lardo (without the rind).
- Moisten with dry white wine.
- Cover the dish with aluminum foil.
- Bake in a static oven at 180°C for about 1 hour and 30 minutes.
- Remove from the oven, discard the twine, slice the turkey, and serve with its cooking juices.
