Classic Roman-style fried rice croquettes with a molten mozzarella core.

Method
- Prepare a soffritto with finely chopped celery, carrot, and onion in oil with a touch of garlic.
- Add basil leaves and bay leaves to the soffritto.
- Pour in tomato passata, fill the empty bottle with water, and add it to the pan. Season with salt and cook for 10 minutes.
- Add the rice and cook until al dente, about 4 minutes less than the standard cooking time.
- Finish by stirring in butter, Parmesan cheese, and fresh basil, then let it cool.
- Cut the pizza-style mozzarella (low-moisture) into thick chunks and season with pepper.
- Form the rice into balls using wet hands, make a hole, and insert a piece of mozzarella.
- Create a batter with flour and water.
- Dip the suppli in the batter, then roll in a mix of breadcrumbs and panko.
- Fry in seed oil at 170°C until golden and crispy.
