Method

  1. Prepare a soffritto with finely chopped celery, carrot, and onion in oil with a touch of garlic.
  2. Add basil leaves and bay leaves to the soffritto.
  3. Pour in tomato passata, fill the empty bottle with water, and add it to the pan. Season with salt and cook for 10 minutes.
  4. Add the rice and cook until al dente, about 4 minutes less than the standard cooking time.
  5. Finish by stirring in butter, Parmesan cheese, and fresh basil, then let it cool.
  6. Cut the pizza-style mozzarella (low-moisture) into thick chunks and season with pepper.
  7. Form the rice into balls using wet hands, make a hole, and insert a piece of mozzarella.
  8. Create a batter with flour and water.
  9. Dip the suppli in the batter, then roll in a mix of breadcrumbs and panko.
  10. Fry in seed oil at 170°C until golden and crispy.
