A simple and flavorful vegetarian tomato sauce made with a soffritto of celery, carrot, onion, and garlic, slowly cooked with hand-crushed tomatoes and basil. This 'fake' meat sauce is a classic Italian comfort food that brings back memories of family and tradition.

Method
- Prepare the soffritto with celery, carrot, onion, and a clove of garlic. To chop the onion quickly, cut it in half, slice lengthwise, then cut across into small dice.
- Heat extra virgin olive oil in a pan and add the soffritto.
- Add a little pasta cooking water.
- Add the peeled tomatoes (hand-crushed, not blended).
- Season with salt, pepper, and add basil leaves.
- Cook the sauce over low heat.
- Meanwhile, cook the pasta.
- Drain the pasta and toss it with the sugo finto.
