Method

  1. In a bowl, mix together all-purpose flour, sugar, baking powder, salt, soft butter, and lightly beaten eggs.
  2. Knead the dough by hand until smooth, then wrap in plastic wrap and let rest for at least 2 hours.
  3. After resting, dust the dough with plenty of flour, roll it out, and cut it into strips. Then cut the strips into small pieces using a knife.
  4. Remove excess flour from the pieces and roll them between your hands to round them slightly.
  5. Fry the dough pieces in hot oil until golden and floated. Drain on paper towels.
  6. In a separate pot, heat honey over moderate heat until it boils. Let it boil for exactly one minute.
  7. Optionally add orange zest and a little anise to the honey.
  8. Add the fried struffoli into the honey and stir well with a wooden spoon until coated.
  9. Add colorful sprinkles and confetti, mix, then let it set for about 5 minutes.
  10. Serve shaped into a mound or as desired, and finish with more sprinkles on top.
