Neapolitan Christmas fried dough balls coated in honey and colorful sprinkles, crispy on the outside and soft inside.

Method
- In a bowl, mix together all-purpose flour, sugar, baking powder, salt, soft butter, and lightly beaten eggs.
- Knead the dough by hand until smooth, then wrap in plastic wrap and let rest for at least 2 hours.
- After resting, dust the dough with plenty of flour, roll it out, and cut it into strips. Then cut the strips into small pieces using a knife.
- Remove excess flour from the pieces and roll them between your hands to round them slightly.
- Fry the dough pieces in hot oil until golden and floated. Drain on paper towels.
- In a separate pot, heat honey over moderate heat until it boils. Let it boil for exactly one minute.
- Optionally add orange zest and a little anise to the honey.
- Add the fried struffoli into the honey and stir well with a wooden spoon until coated.
- Add colorful sprinkles and confetti, mix, then let it set for about 5 minutes.
- Serve shaped into a mound or as desired, and finish with more sprinkles on top.
