Method
- Cut the chicken breast into bite-sized pieces and place in a bowl.
- Marinate with lemon juice, kefir, a drizzle of oil and oregano. Mix and let rest.
- Soak the bamboo skewers in water.
- Prepare the salad: cut the tomatoes into pieces, the cucumber into slices, the peppers into small cubes.
- Slice the red onion and soak in water and vinegar to reduce sharpness.
- Roughly chop the lettuce.
- Pit the Kalamata olives.
- Prepare the dressing: crumble the feta, add oregano, a splash of warm water and oil, blend.
- Thread the marinated chicken onto the skewers, alternating with spring onion pieces if desired.
- Cook the skewers on a very hot griddle, turning, until golden.
- Assemble the salad with lettuce, tomatoes, cucumber, peppers, onion, olives and capers (cucunci).
- Serve the skewers with the salad and the feta dressing.
