Chicken Skewers with Pumpkin and Potatoes

Marinated chicken thigh skewers with pink pepper and lemon, grilled and served with a side of sautéed pumpkin, potatoes and cabbage.

15 items- Chicken Thighs (with skin)boneless thighs or thighs with bone, cut into pieces
- Lemonzest and juice
- Pink Peppercrushed or ground
- Sweet Paprikanot spicy
- Red Onionthinly sliced, divided between marinade and vegetable sauté
- Extra Virgin Olive Oilfor marinade and cooking
- Fresh Rosemaryleaves removed from stem

- Pumpkinpeeled and diced
- Potatoes (Fucino)with skin, diced
- Cabbage (Verza Riccia)savoy cabbage, cut into strips
- Black Pepperfreshly ground, for the vegetables
- Watera splash for cooking vegetables
- Fresh Scamorza Cheese(optional) — optional, cubed and added at the end of grilling
- Wooden Skewerssoaked in water before use
Method
- Cut chicken thighs (with skin) into small bite-sized pieces.
- In a large bowl, combine the chicken with salt, pink pepper, sweet paprika, lemon zest and juice, red onion rings, olive oil, and fresh rosemary. Mix well and marinate for at least 1 hour (overnight for best flavor).
- Cut pumpkin and potatoes (with skin) into small dice. Cut cabbage into strips.
- In a wok, heat olive oil and sauté the remaining red onion until translucent. Add the cabbage, pumpkin, and potatoes. Season with salt and black pepper, add a splash of water, and cook covered for about 20 minutes until tender.
- Soak wooden skewers in water for at least 30 minutes.
- Thread the marinated chicken onto skewers, alternating with thin slices of lemon.
- Grill the skewers on a barbecue or grill pan over medium-high heat, turning occasionally, until cooked through and charred.
- In the last minute of grilling, add cubes of fresh scamorza cheese to the skewers so they melt slightly.
- Serve the chicken skewers with the sautéed vegetables.
