Delicious skewers made with double pork belly, tomino cheese, bell pepper, spring onion, and apple, cooked in a pan until golden and the cheese melts.

Ingredients
9 items- Pancetta Doppia Tirolese (Pancia Doppia)A piece of double pork belly, preferably Tyrolean style, lightly smoked.
- 1 pcsTominoSoft cheese that melts well.
- 1 pcsBell PepperAny color bell pepper.
- 1 pcsSpring OnionFresh spring onion.
- 1 pcsAppleCrisp apple, with skin.
- 1 pcsLemonUsed to prevent apple from browning.
- Coarse SaltTo taste.
- PepperTo taste.
- Olive OilFor cooking.
Method
- Cut the tomino cheese into 6 equal pieces.
- Remove the top of the bell pepper, hollow it out, and remove all seeds. Cut the pepper into small pieces (about 5).
- Trim the spring onion and cut it into rounds.
- Cut the apple into rounds, keeping the skin on. Use about 4 slices.
- Cut the lemon in half and squeeze juice over the apple slices to prevent browning.
- Assemble the skewers: start with a piece of pancetta, then add a piece of tomino, a piece of bell pepper, a slice of apple, and a slice of spring onion. Repeat the order if making longer skewers. Secure with double skewers for stability.
- Season the assembled skewers with coarse salt and pepper.
- Heat a little oil in a pan over medium heat. Place the skewers in the pan and cook for about 2–3 minutes on each side until the pancetta is golden and the cheese starts to melt.
- Remove the skewers from the pan, let them rest briefly, then serve warm.
