Oriental Minced Meat Skewers

Minced beef skewers wrapped around spring onions or lemongrass, pan-fried and served with a creamy curry-apple sauce and stir-fried broccoli. An oriental-inspired twist on classic Italian skewers.

- Spring OnionsUsed as skewer sticks; can substitute with lemongrass
- Clarified ButterFor cooking the skewers and broccoli
- BroccoliBlanched then stir-fried
- 1 pcsRed OnionChopped, for the sauce
- 1 pcsAppleDiced, old apple preferred for sweetness
- Curry PowderMild curry powder
- Cooking CreamOr yogurt as substitute
- Soy SauceFor the broccoli
- Green Chili Pepper(optional) — For garnish
- Peperoncino Rosso(optional) — For garnish
Method
- In a bowl, combine the minced beef, grated garlic, lime juice and zest, chopped parsley, chopped red chili peppers, and salt. Mix well with your hands until sticky.
- If using spring onions (cipollotti), take a spring onion and wrap the meat mixture around it, pressing firmly to adhere. Repeat with remaining spring onions or lemongrass stalks.
- Bring a pot of salted water to a boil. Cut the broccoli into florets and blanch briefly. Drain, reserving some cooking water.
- For the sauce: in a pan, melt some clarified butter. Add the chopped red onion and diced apple. Cook for a few minutes, then add curry powder and toast.
- Add a splash of the reserved broccoli water and the cream (or yogurt). Stir and cook for a few minutes. Blend until smooth.
- In a large pan, heat clarified butter. Place the skewers in the pan, pressing them lightly. Cook until golden brown on all sides.
- Add the blanched broccoli to the pan with the skewers. Drizzle with soy sauce and toss to combine.
- Serve the skewers and broccoli with the curry-apple sauce. Garnish with chopped green and red chili peppers. Optionally, serve with cooked spelt or rice.
