Tender lamb shoulder skewers marinated in aromatic spices, served with creamy tahini sauce and a fresh cucumber, tomato, and onion salad. A Middle Eastern-inspired dish with a Roman twist.

Method

  1. Cut the lamb shoulder into bite-sized pieces.
  2. Marinate the lamb with spices (paprika, cumin, curry, sumac, or a shawarma spice mix), whole garlic cloves, and a drizzle of olive oil. Let rest for at least 30 minutes.
  3. For the tahini sauce: mix 2 tablespoons of tahini paste, lemon zest and juice, a drizzle of olive oil, salt, and a little water. Stir until creamy and thick.
  4. For the salad: dice cucumber, tomato, and onion into small cubes. Season with lemon juice, salt, and olive oil.
  5. Soak wooden skewers in water for 30 minutes to prevent burning.
  6. Thread the marinated lamb onto the skewers, alternating fatty and lean pieces.
  7. Cook the skewers in a pan over medium heat with a drizzle of oil for about 2 minutes per side, turning occasionally, until cooked through (about 12 minutes total).
  8. Optionally, char lemon halves in the same pan for extra flavor.
  9. Plate: spread tahini sauce on the plate, place skewers on top, add the fresh salad in the center, sprinkle with chopped parsley and fennel fronds, add pickled onions if desired, and finish with a drizzle of olive oil.
