Kidney Stew

A traditional Italian kidney stew prepared by Giorgione. The kidney is soaked in milk, then cooked with mixed onions, butter, white wine, lemon, and pepper. Slow-cooked to tenderness.

Ingredients
10 items- 2 pcsRognonewhole kidneys, cleaned
- Fresh Whole Milkfor soaking and for cooking
- Fine Saltto taste
- Ground Black Pepperto taste
- 1/2 pcsCipolla Giallapreferably from Cannara
- 1/2 pcsWhite Onion
- 1/2 pcsRed Onion
- Buttergenerous amount
- White Winefor deglazing and cooking
- 1 pcsUnwaxed Lemonzest used
Method
- Clean the kidney, removing the central ducts and fat. Cut into small pieces.
- Place the kidney pieces in a bowl with fresh whole milk, a little salt, and pepper. Soak for at least 2 hours.
- Meanwhile, prepare the onions: half yellow onion, half white onion, and half red onion (preferably from Cannara). Clean and slice them.
- In a large pan, melt a generous amount of butter. Add the onions, season with salt and pepper. Cook slowly until they soften without browning. Deglaze with white wine.
- After 2 hours, drain the kidney from the milk, rinse, and squeeze. Add it to the pan with the onions. Add a little more white wine and work the mixture with your hands. Let it rest for about 1 hour.
- After resting, drain any excess liquid. Add the zest of an untreated lemon.
- Pour milk over the kidney (it can be the reserved soaking milk or fresh milk), covering it completely. Place the lemon on top. Stir gently.
- Cook on a wood stove (or very low heat) for about 1 hour. Serve hot.
