Spaghettoni with Ossobuco alla Toscana

A rich first course where ossobuco (braised veal shank) is cooked with tomato, wine, and herbs, then paired with thick spaghettoni pasta.

Method

  1. Flour the ossobuco and brown it in butter with a pinch of salt.
  2. Finely chop the onion.
  3. Return the ossobuco to the pan, deglaze with a glass of red wine.
  4. Add tomato puree, water (or broth), and a bay leaf. Simmer for 1.5 hours.
  5. When the ossobuco is tender, remove the meat from the bone and chop it with a knife.
  6. Cook the spaghettoni in boiling salted water until al dente.
  7. Drain the pasta and finish cooking it in the pan with the ossobuco sauce.
  8. Taste and serve.
