Spaghetti with Tomato and Camembert

A simple and quick pasta recipe where hot spaghetti is tossed with a cold sauce of raw tomato, garlic, basil, and camembert cheese. The heat of the pasta melts the cheese, creating a creamy, flavorful dish. Finished with lemon zest for a fresh touch.

Ingredients

- 1 pcsSorrento Tomatoor cuor di bue or datterino, ripe
- Camembertwith rind, cut into cubes
- 1 pcsGarliccrushed, removed before serving
- Chili Pepperdried or fresh, to taste
- Basilfresh leaves
- Extra Virgin Olive Oilgenerous drizzle
- Saltto taste, also for pasta water
- Pepperblack, to taste
- Lemon Zestfresh zest, for finishing
Method
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
- Meanwhile, dice the ripe tomato into small cubes, including the seeds.
- In a large bowl, combine the diced tomato, a crushed garlic clove, one dried chili (or fresh to taste), fresh basil leaves, a pinch of salt, black pepper, and a generous drizzle of extra virgin olive oil. Mix well and let it marinate while the pasta cooks.
- Cut the camembert (with rind) into small cubes.
- When the pasta is al dente, remove the garlic clove from the dressing (if desired).
- Drain the pasta, reserving a small amount of pasta cooking water.
- Add the hot pasta to the bowl with the tomato dressing, add the camembert cubes, and toss vigorously. Add a splash of pasta water as needed to help the cheese melt and create a creamy sauce.
- Finish with fresh lemon zest and extra basil leaves. Serve immediately.
