Spaghetti with Zucchini and Ricotta

A creamy and flavorful summer pasta dish with trumpet zucchini, ricotta, anchovies, and cherry tomatoes, perfect as a one-dish meal.

- 2 pcsAnchovies in Oil(optional) — Can be omitted if not liked
- Trombetta ZucchiniUse trumpet zucchini, about 2-3 medium
- 2 pcsCherry TomatoesCherry tomatoes
- RicottaFresh ricotta, about 200-250g
- Zucchini FlowersZucchini flowers, a handful
- BasilFresh basil leaves
- SpaghettiGragnano PGI spaghetti, about 320g for 4 servings
- Olive OilExtra virgin olive oil, as needed
- Coarse SaltCoarse salt for pasta water, plus to taste
- Black PepperBlack pepper to taste
- Dried Chili Pepper(optional) — Dried chili pepper, to taste
Method
- Slice the spring onion very thinly.
- Add olive oil to a pan and sauté the spring onion gently without burning.
- Add two anchovies to the pan and melt them slowly into a cream.
- Slice the trumpet zucchini into rounds, discarding the seedy core, and add them to the pan. Sauté until slightly browned but still crunchy.
- Add two cherry tomatoes to the pan and stir briefly.
- Cook the spaghetti in salted boiling water until al dente (12 minutes). Remove 3 minutes early to finish in the sauce.
- In a separate bowl, mix the ricotta with a little pasta cooking water and black pepper to create a creamy sauce.
- Spread the ricotta cream on the bottom of a serving plate.
- Add the partially cooked pasta to the zucchini mixture. Toss with a little cooking water to let the pasta absorb the flavors.
- Add a pinch of dried chili pepper (optional) and adjust salt.
- Turn off the heat and add fresh zucchini flowers (stem removed) and basil leaves. Toss gently.
- Plate the pasta on top of the ricotta cream. Drizzle with a bit of the anchovy sauce (the anchovy mixture from the pan) on top.
- Serve immediately.
