Spaghetti with Canned Tuna, Escarole and Crispy Breadcrumbs

Ingredients
13 items- 250 gSpaghettiPreferably spaghetti alla chitarra di Gragnano
- 300 gCanned TunaCanned tuna in water and salt (al naturale)
- 1 pcsIndivia Riccia1 large head of escarole
- Cherry TomatoesA handful of ripe cherry tomatoes
- Garlic2-3 cloves, sliced
- Stale BreadA few slices of stale bread, for breadcrumbs
- Anchovies2-3 anchovy fillets in oil
- Capers1 tablespoon capers, rinsed
- OlivesA handful of pitted olives (preferably sottaceto)
- Olive OilExtra virgin olive oil, as needed
- SaltSalt for pasta water and to taste
- Black PepperBlack pepper, to taste
- Chili Pepper(optional) — Dried chili flakes, optional
Method
- Bring a large pot of salted water to a boil for the pasta.
- Cut a small cross on each cherry tomato, blanch in the boiling water for 10 seconds, then remove and peel. Set aside.
- In a small pan, heat olive oil and anchovies over low heat, stirring until the anchovies dissolve into a creamy sauce.
- In a food processor, pulse stale bread slices into coarse crumbs. Add to the anchovy oil and toast over low heat, stirring constantly, until golden and crispy. Set aside.
- In a large pan, heat olive oil and sliced garlic over medium heat until golden. Remove the garlic once done.
- Add the spaghetti to the boiling water and cook for 9 minutes (slightly underdone) as it will finish cooking in the pan.
- Chop the rinsed capers and set aside. Cut the cherry tomatoes in half.
- Prepare the escarole: remove the tough bottom and cut into large pieces.
- Halfway through cooking (after about 4-5 minutes), add the escarole to the pasta pot to cook together.
- To the pan with the garlic oil, add the capers and cherry tomatoes. Cook for 1 minute, then add the olives.
- Drain the pasta and escarole together, reserving some pasta water. Transfer to the pan with the sauce.
- Add a splash of pasta water and toss everything over medium heat until the pasta is al dente and well coated.
- Open the canned tuna and break it into large chunks.
- Season the pasta with black pepper and optional chili flakes.
- Plate the pasta. Top with the crispy breadcrumb mixture, then arrange the tuna chunks on top. Garnish with extra olives if desired.
