Spaghetti with Mantis Shrimp

A simple but flavorful Roman-style spaghetti with mantis shrimp, fresh tomatoes, garlic, chili, and white wine. Quick and delicious!

Method

  1. Bring a large pot of salted water to a boil for the pasta.
  2. Clean the mantis shrimp by cutting them into pieces (head, body, tail).
  3. In a large skillet, heat a generous drizzle of olive oil over medium heat. Add the garlic cloves and a pinch of chili pepper.
  4. Add the mantis shrimp pieces and let them sear for 1-2 minutes.
  5. Pour in a splash of white wine and let it evaporate completely.
  6. Remove the garlic cloves if desired.
  7. Add the torpedino tomatoes (cut in half or quarters) to the skillet and cook for a couple of minutes, stirring.
  8. Cook the spaghetti to al dente (about 1 minute less than package instructions).
  9. Reserve some pasta water, then drain the spaghetti and transfer them to the skillet with the sauce.
  10. Toss everything together, adding a little pasta water if needed to emulsify. Add chopped fresh parsley.
  11. Serve immediately with a drizzle of extra virgin olive oil and a pinch of chili or black pepper if desired.
